The Miso-Glazed Salmon is the dish we reach for when we want to remind ourselves that simplicity, done properly, is the most luxurious thing in the kitchen.
A fillet of sustainably sourced salmon gets a generous coating of white miso whisked with a little honey — nothing else. No marinade time, no multi-step process. Into a hot oven it goes, and twelve minutes later you’ve got something that tastes like it took hours: a deep, savoury-sweet glaze that’s caramelised at the edges, glossy across the top, with flesh that flakes under a fork into soft, coral-coloured ribbons.
It comes over brown rice that’s been cooked plainly — no stock, no aromatics — because the glaze is doing all the work. A scattering of toasted sesame seeds and finely sliced spring onions across the top, and that’s it. Clean. Confident. The kind of dish where every ingredient has a reason for being there.
Good warm from the oven. Almost better cold the next day, the glaze set and concentrated, over a pile of dressed leaves.

This is the dish that taught me how much flavour you can build into a piece of fish with just three ingredients. The miso caramelises in the oven — it goes glossy and deep and slightly sweet at the edges. I'll often make an extra portion just so I have it cold the next day over a grain salad. That's when it's at its best.
