How we source

Good food starts long before the kitchen.

We're not perfect, and we won't pretend to be. But we make considered choices at every stage — and we're always looking to do better.

Ingredients

We cook with whole foods.

Every dish starts with real ingredients — not ingredient blends, not flavour packets, not things with twelve-word names. Proteins, vegetables, grains, pulses, herbs and spice. If it's processed, we'll tell you why it's there.

Quality proteins

Free-range poultry and higher-welfare meat where available. Line-caught and sustainably sourced fish. We choose suppliers who we'd be comfortable naming.

Seasonal vegetables

We build menus around what's good right now. Seasonal produce tastes better, travels less, and supports growers working with the calendar rather than against it.

Whole grains & legumes

Freekeh, farro, black rice, red lentils. Not because they're fashionable — because they're genuinely nutritious and deeply satisfying. They also happen to cook beautifully.

Minimal ultra-processing

We avoid ultra-processed ingredients where we can. When something borderline does appear — a fermented paste, a quality condiment — it earns its place on flavour grounds, not convenience.

The kitchen

Made fresh, every week. No exceptions.

We batch-cook on Thursday and Friday. That's not a delivery window — it's the production schedule. Every dish is made that week, from that week's ingredients, for that week's customers. Nothing carries over.

Shared base ingredients across the weekly menu reduce waste and keep the kitchen efficient. Precise portion planning means very little goes unsold. What does, goes to staff or local food initiatives.

Packaging

Less is more.

We're working through our packaging with an honest eye. Our goal is recyclable or compostable materials throughout, with no unnecessary layers. We don't add inserts, tissue paper or branded filler. The food is the thing.

Our ongoing commitment

We don't think ethical sourcing is a box to tick — it's a direction of travel. We'll be transparent about where we are, honest about what we haven't figured out yet, and consistent about moving in the right direction. If you have questions about a specific ingredient or supplier, email us.
